The kitchen staff at Kylesku Hotel are a dynamic team of professionals with a commitment to fine dining excellence and a passion for local produce. We’re also a creative crew who love working in new ways with seasonal ingredients, bycatch and foraged foods. Working at Kylesku, the chefs develop exceptional expertise in seafood, meat and game, led by our wonderful Head Chef Jo Christison and Sous Chef Tommy Barney.

Head chef

Jo comes from Glasgow and joined Kylesku in 2014 from a role as head chef in a city fine dining restaurant. She has trained in butchery, cheese-making, bread-making, and smoking and curing meat.

Walks, climbing, cooking, drinking. Running a gardening club once a week with local toddlers.

Sous chef

Tommy hails from Perth and has worked in kitchens since the age of 14. He spent three years with the Merchant Navy as a chef, before experiencing other land-based kitchens around Edinburgh and the Highlands. Loves nothing more than discovering the local landscape and foraging for his own food.

James joined the kitchen team at Kylesku Hotel in 2017. He comes from Derby and started with the Kylesku team as a Kitchen Porter before expanding his role. You might find him polishing his motorbike when not at work.

Road coming from Kylesku Bridge to Scourie. My favourite road, good for bends and curves and general riding.

Riding motorcycle through the Highlands – a good way to reduce stress and get out and about.

Currently training to be a nurse, Jamie joins us in his holidays. He spends his days off on the local lochs, either diving, kayaking or fishing.

Nicknamed the ‘Wee Welshie’. She’s come straight from catering school, having worked in a local restaurant for three years in coastal Wales. She brings common sense to the kitchen team! Food-curious, makes good biscuits and aspires to run her own business.

One of Kylesku’s most recent arrivals, Mark is a chatty Glaswegian who has discovered the world of seafood, and enjoys nothing better than jumping in the loch in between service.

Paul comes from Lancashire and is a former army engineer. Before joining the Kylesku staff, he worked in other roles in the hospitality industry. Will hitchhike his way around the Highlands to climb all the local hills

There are many places around Kylesku and all are nice, from short trips up Stac Polly to more adventurous walks.

I generally like being outdoors fishing, walking, discovering new places and learning about different countries’ food and drink.
